Tim Redmond, Executive Chef
An Eastern Shore native,
Executive Chef Tim Redmond has a fresh and frequently
irreverent take on the traditional cuisine of Japan. Tim's
passion for sushi knives came from extensive travel in
Asia, Europe and specifically Japan, where he learned to
combine flavors and execute techniques. Tim’s artistic eye
confidently allows experimenting with the traditional
while still preserving the essential elements of
time-honored Japanese cuisine.
Tim previously worked Ava's Pizzeria & Wine Bar (across the street), where his skills with raw tuna and making food into a work of art were noticed on a rainy Wednesday night.
Akai has been featured in Shore Magazine as well as What's Up Eastern Shore Magazine. Located inside a 150 historic waterman's home, Akai is a truly unique dining experience for couples & groups alike.
